The moment you think Muslim cuisine, the first thing that comes to the mind is the yummilicious Biryani and Kebabs and not to forget that lip-smacking dessert at the end of the meal! One of the best aspects of an Indian wedding is the food that is served to guests – no wedding in India, whether it is Hindu or Muslim, Sikh or Christian, is complete without some tasty mouth-watering cuisines.

Starters

Mutton Seekh Kebab
This is an authentic Muslim dish where the meat (mutton or lamb) is minced properly and then mixed thoroughly with selected spices and grinded well. This pounded meat is then spread on skewers and then cooked on a barbecue or in a grill to cook the meat properly. Served with green coriander chutney, the Seekh Kebabs prepared by Muslim chefs at the wedding have a distinct taste of their own.

Tangri Kebab
Marinated chicken drumsticks are mixed well with herbs and spices before being cooked in the tandoor. Served with small pieces of lemon and onion rings on the side, this dish is filling and yet the tender drumsticks leave guests asking for more!

Bheja Fry
Another authentic Muslim dish in which the brain of the animal is mixed with special herbs and spices and then fried to prepare an exclusive dish, as the name suggests.

Nalli Nihari
This is a royal dish that was served to Mughal emperors during breakfast. This dish is made with beef and mutton (lamb), both. Leg pieces with marrow bones are slowly cooked so the flavours of the spices mix gently.


Malai Kofta

Small chunks of paneer (cottage cheese) are intensely fried and mixed with mashed potatoes, doused in tomato gravy and topped with malai. Just ideal for the vegetarian in you.

Butter Chicken
Pieces of marinated chicken mixed well with garlic and ginger and then pan-fried post which it is dipped in a lavish sauce prepared with tomatoes, butter, cream and lots of spices.

Shahi Mutton Biryani
Long grains of rice blended with spices and ghee and added with pieces of mutton and then slowly cooked over fire. The aroma, the taste and the flavour is an out-of-this-world experience.

Naan
A baked form of flatbread, it is full of butter that can cause a few guilt pangs. However it is super soft and puffy that adds extra taste to the food you eat.

Sheer Khurma
Meaning milk with dates is made by adding milk to vermicelli and cooked over slow fire. When the mixture becomes dense, sugar, dry fruits like almonds and saffron, dates and rose water are added.

Shahi Tukra
A true Mughlai style dessert and highly popular in Muslim weddings, this is made by frying bread slices. The slices are then coated with sugar syrup, and topped with Rabri or sweet thickened milk. The final layer on the top is that of finely grated dry fruits that makes the dish super delicious.
