One of the most popular service styles is called, “French” which has two specific types — Cart French and Banquet French. These are often seen at fine-dining restaurants. 1. Cart French Service

As mentioned above, this is one of the two french service styles. In this, the food is prepared tableside. There is a small table, or as the French call it, gueridon, upon which the cold foods, such as salads, are prepared. Hot foods on the other hand are prepared on a hot plate or rechaud. The desserts, unlike the rest of the food, might be prepared beforehand and displayed on a cart. This cart is then rolled next to the table, giving the guests a clear view of their options. 2. Banquet French Service

Unlike in the cart French service, the food in this service style is prepared inside the kitchen. Then the prepared food is placed on a platter and offered to the guests by the servers. Once the choice is made by the guests, the server serves the food using two silver forks. All the guests are served beginning from the left, as is customary with most of the service styles.

3. Butlered Service

In this kind of service, the food is presented to the guests from the left by the servers. The utensils that they would require are all laid out in front of them on the table itself. This service is also utilized for butler passed hor-d’oeuvres at events such as receptions and Galas. It is a fairly extravagant kind of service to opt for, seeing as all the servers or butlers are dressed up very smartly.

4. Russian (Silver) Service

Usually, you will see Russian (Silver) service being used in high-end restaurants and 5-star hotels. Here, similar to the cart French service, the food is cooked tableside, but instead of being brought to the table by the servers, they plate the food on platters and pass them along. The guests are expected to select whichever food tickles their fancy or have a craving for and assemble a plate for themselves. 5. Buffet Service

Commonly seen at receptions, buffet service has a huge presentation of different foods available, both hot and cold with even different types of cuisines. 6. Gueridon Service

The word ‘Gueridon’ itself means a trolley. It’s embellished or usually ornately carved, and used to prepare or finish off the preparation of the food. In this service, a trolley is used to cook different ingredients with a considerable amount of showmanship. The whole process of cooking is made into an event that needs to be witnessed, such as flambé or carving the food. Due to the showy nature of the service, it is performed next to the guest table.
